These taco salad lettuce wraps are one of those perfectly easy go-to meals. It is so great because it is filling, and fresh and delicious. It is even better if you can use veggies fresh from the garden! {Is there anything better in this world than a tomato fresh from the garden!?} And, did I mention AVOCADO RANCH!? Oh holy yum... it is SO good! This is perfect to add to the summer meal rotation!
Taco Salad Lettuce Wraps with Avocado Ranch Dressing
Ingredients
Wrap
- 1 head of baby romaine or butter lettuce
- 1 lb. ground beef browned
- 1/2 cup water
- 1 1/2 T Taco seasoning
- 1 1/2 cups cherry tomatoes halved
- 1 can black beans drained and rinsed
- 1 can sliced olives
- 1/2 cup purple onions diced
Toppings
- 1 bunch cilantro lightly chopped
- Crunchy tortilla strips
- 1 cup shredded cheddar or Mexican blend cheese
Avocado Ranch Dressing
- 1 large ripe avocado
- 1/2 cup sour cream I use light
- 1/4 cup milk or more to thin to taste
- 1 tablespoon fresh squeezed lemon juice
- 1 1/2 tsp rice vinegar
- 3 cloves minced garlic approx 1 1/2 tsp.
- 2 tablespoons minced dried parsley
- 1/4 tsp. salt or more to taste
Instructions

Pull the lettuce leaves off of the stock and rinse well. place on a towel and set aside.

Brown the ground beef in a pan on the stove. Once cooked, add taco seasoning and water. Let simmer for 3 minutes.

To assemble a wrap, place one leaf of lettuce on a plate or in your hand. Layer ground beef, tomatoes, black beans, olives, and purple onions. Sprinkle with cilantro, cheese, and tortilla strips. Drizzle with avocado ranch dressing and enjoy!
Dressing

Mash avocado in a bowl until smooth. Add sour cream and mix well. Whisk in milk. Then add lemon juice, vinegar, garlic, parsley, and salt stirring in between each ingredient.
I like to serve this buffet style so everyone can make their lettuce wraps just the way they like them. I usually set everything out in bowls and everyone can just have at them. Just place all of the rest of the ingredients in bowls or on a platter and let everyone dig in!

It is best served right away, but can be stored in the fridge for up to 4 days.
